Vitamin D rich Avocado Toast Breakfast
Not getting enough sunshine during the winter months? Try this easy avocado toast breakfast recipe to boost your vitamin D levels. I guarantee that it tastes better than any other supplement from the store.
Food like fatty fish, eggs, liver, and mushrooms are naturally high in vitamin D3 which your body needs for a myriad of health benefits.
Ingredients:
- 2 slices sourdough bread
- 2 eggs
- 1/2 avocado
- butter (preferably grass-fed, or organic)
- microgreens or cilantro to garnish
- sea salt
Instructions:
Toast your bread slices and thinly spread with butter or ghee. In a non-toxic stainless steel pan melt butter and fry 2 eggs to your liking. I prefer a slightly runny yolk.
Slice half an avocado into thin slices and layer on your toast. Load with microgreens or cilantro then top it with the eggs.
Optional on top or on the side: tomatoes, cheese slices, bacon.
This is one of those breakfasts that can be served from littles to the elderly and everyone will love it!
Enjoy!
